Gluten-Free Maple Pumpkin Fritters

We first introduced Gluten-Free Maple Pumpkin Fritters at our annual Maine Maple Weekend event in 2017.

2 cups Pamela’s Baking mix
2 1/2 teaspoons baking powder
1/3 cup Maple Sugar
1/4 teaspoon salt
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 large egg
1 cup canned pumpkin
3 Tablespoons milk
2 Tablespoons melted butter
1 teaspoon pure vanilla
Maple Sugar for rolling

Instructions:

Heat Oil to 365 degrees F.
Combine flour sugar, baking powder, salt, cinnamon & nutmeg. Stir to blend.

In small bowl whisk egg with pumpkin and milk. Stir in butter and vanilla. Pour this mixture into dry ingredients until blended. Drop batter by teaspoonfuls into hot oil and fry 5-6 fritters at a time. Fry turning to brown on all sides 3-4 minutes.

Remove from oil with a slotted spoon to paper towels. Roll in Spring Break maple sugar, or maple sugar mixed with cinnamon.

Makes 2 1/2 to 3 dozen fritters
